elite | studio e has had the opportunity to improve this Manhattan law firm’s foodservice operation on multiple occasions. During the first renovation, we refreshed the deli and salad stations. Aside from beverage options, these were the only onsite dining options and there was no back of house kitchen. The scope of work included replacing foodguards, countertops and fronts, and trayslides; incorporating digital signage; and painting.
Fast forward to 2017 when KLNF and the operator approached our team again. This time they wanted us to design and build a complete renovation that better suited the firm’s needs. This renovation expanded the front of house to provide deli, salad, soup and entrée offerings. In addition, a back of house production kitchen was build to support this offering and catering. A ventless warming area was also installed to support the day to day operations and the conference center.
To ensure the new space met the operators’ needs, its staff and elite|studio e’s designers worked closely to specify the most flexible and efficient equipment to support the intended menu offering. With gas and ventilation not available, we had to test, socialize, and specify ventless cooking equipment within the space.
